Healthy Recipes With Flaxseeds And Rye

Flaxseed Recipe Ingredients

3/8 cup flaxseeds, divided (2 tablespoon and 1/3 cup)
1 cup rye flour
2 ¼ cup all purpose flour
1 ¼ teaspoon salt
1 packet active dry yeast
1 tablespoon honey
2 tablespoon olive oil
1½ cup warm water

Method:

  1. Place 1/3 cup of flaxseeds in a large skillet and sauté them over medium heat stirring constantly until the seeds pop up gently or for about 5 to 7 minutes. Let the seeds cool in the same skillet. Once the flaxseeds are cool enough to handle, place the roasted seeds in a blender and blend to get a fine powder. You will get about ½ cup roasted flaxseed powder.
  2. Stir together the rye flour along with 1 cup all purpose flour and yeast in a large bowl. Add the oil, honey, salt and warm water to the flour mixture. With an electric mixer beat the mixture on low speed for 20 to 30 seconds. Constantly scrape the sides of the bowl to prevent lumps. Add the ground flaxseed powder and the remaining all purpose flour and keep beating for about 2 to 3 minutes to get a semi hard dough.
  3. Remove the beater and turn out the dough on a lightly flour surface. Add the remaining all purpose flour and kneed the dough with your hands to get a moderately stiff dough which is elastic and smooth. Shape the stiff dough into a ball and place it in a greased bowl. Cover the bowl and place it in a warm place for about an hour to let the dough rise until it is almost double in size.
  4. Punch down the risen dough and turn out on a lightly floured surface. Cover the bowl again and let the dough rest for 10 minutes. Grease 2 baking sheets and leave aside.
  5. Roll the dough into a large rectangle, about 16 x 8 inches large. Brush the rectangle dough with water generously. Sprinkle with the remaining 2 tablespoon flaxseeds, pat them gently into the dough.
  6. Cut the dough into 1 inch wide strips crosswise and place these strips on the greased baking sheet, 1 inch apart. You may even twist each bread stick twice or thrice before placing on the baking sheet. Cover the sheet and let the dough rise again in a warm place until it becomes almost double in size. This should take about 30 minutes.
  7. Preheat the oven to 425 degree Fahrenheit. Bake the breadsticks for 14 to 15 minutes or until they turn golden brown. Remove them from the baking sheet and let them cool on a wire racks before serving. This recipe makes 16 servings.
