Simple Meatloaf Recipes and Mom’s Meat Loaf

Choosing lean cuts of meat is the main aim along with low fat to cook any low calorie meat recipes. Listed below are some delicious low calorie meatloaf recipes and meat recipes which provides around 200-250 calories and 10 gm fat. Serves 1

Meatball and mushroom skillet

Ingredients:

2 ounce lean meat, ground
¼ small onion, chopped finely
2 tablespoon fresh breadcrumbs
¼ teaspoon dried drill
½ egg whites
¼ teaspoon Worchester sauce
¼ small cup skim milk or low fat milk
½ cup cream of mushroom soup, condensed and low fat
1 teaspoon vegetable oil
Salt and pepper to taste

Method:

Take half the amount of dried drill and combine well with the breadcrumbs. Mix onions, egg and Worchester sauce together. Add salt and pepper as per taste to this mixture.
Add meat and with your hands combine well and form 4 meat balls. Take a nonstick skillet and heat oil on a medium flame. Spray cooking oil and cook meat balls for 6-7 minutes turning often so they get an even light brown color. If there is excess fat in the meatballs, discard. Add the remaining ingredients and stir. Simmer on low flame till the meat balls are cooked thoroughly.

Mom’s meatloaf

Ingredients:

25 gm lean pork, ground
25 gm lean veal, ground
50 gm lean meat, ground
¼ small onion, chopped
½ egg whites
 ¼ small cup rolled oats
¼ small cup sweet relishes
1 tablespoon ketchup
1 teaspoon Worchester shire sauce
Salt and pepper to taste

Method:

Lightly oil the baking dish and place aluminum foil over it. Preheat the oven to 350 degree Fahrenheit. Combine ½ tablespoon ketchup, eggs, oats, and onions in a bowl. Add salt pepper and Worchester shire sauce to it. Stir with a spoon to mix it well. To this add all the three ground meats and mix well. Line a loaf pan with cling wrap and pack the meat mixture in it. Place the meat mixture in the foiled baking dish and remove the plastic wrap. Bake for about 45 minutes. Spread the remaining ketchup on top of the meatloaf and bake again for about15 minutes. Remove from the oven when done and let it stand for 5 minutes before slicing. Serve hot with relish.

Meat Stir Fry Recipe

Ingredients:

1 teaspoon soy sauce
1 clove garlic, crushed
1 teaspoon vegetable oil
½ teaspoon ginger, ground
1 big cup mixed vegetables, stir fried
3 ounce boneless extra lean meat (you may choose pork or beef), cut into ¾ inch slice across grain

Method:

Take a medium size glass bowl and combine soy sauce, ginger, garlic and vegetable oil. Add boneless meat and mix well. Let the meat get marinated in this mixture for 30 minutes. Take a nonstick skillet and spray with a nonstick cooking spray. Heat the skillet under medium flame till hot. Remove meat from marinade and add in the skillet. Cook on a medium flame stirring frequently for 5 minutes to prevent sticking. Add mixed vegetables and sprinkle a teaspoon of water. Cover the skillet with a lid and cook for 10 minutes or till the vegetables and meat is tender and crisp to eat. Serve hot.
