Grilled ginger pork roast

Ingredients:

2 oz pork tenderloin roast
¼ teaspoon ginger, grated freshly
1 clove garlic, minced
1 tablespoon soy sauce
1 teaspoon olive oil, extra virgin preferably
2 teaspoon water
1 teaspoon sugar
Salt and pepper to taste

Method:

Choose extra lean cuts of pork tenderloin and trim any extra visible fat. Also cut any silver skin on the tenderloin as it doesn’t soften when cooked and if left uncut it can curl the tenderloin in an undesirable quarter moon shape. At various points score the tenderloin across the width and keep aside. Take a medium size re sealable plastic bag, place roast in it and set in a shallow dish. Combine other ingredients – ginger, garlic, sugar, soy sauce, water, olive oil salt and pepper in a small bowl.
Pour these seasonings on the pork and seal the plastic bag. Keep it in the refrigerator overnight and let the pork get marinated in these seasoning. Turn occasionally to disturb the marinade. Before cooking remove roast from the refrigerator and thaw thoroughly. Drain and discard excess watery marinade. Preheat the barbecue grill and place the roast on the hot grill. Close lid and grill turning occasionally to prevent burning. Cook till done or the pork is no longer pink. After done remove from the grill and let it stand for 10-15 minutes. Carve and serve. This recipe serves 1 and provides less than 200 calories and 9 gm fat.
